It's not very difficult to stay undetected, even this late in the war. I guess it will become harder after May '43.
Once the DD come to 5-6km I slow down to 1kt, and completely stop once they are 2-3km away. I keep my periscope down, and raise it only shortly to get the data.
My targets were 3.5-4 km away, but they were on the far side of the convoy. THe nearest merchant was less than 1km away, the leading DD passed about 1.5km from me, and the flanking one was about 2km away.
As soon I fire last torpedo, I start diving, very slow at 1kt, and alter my course some 30°.
