Don't worry about the - +dvd thing, nowadays the the drives dead-em and burn em without any problem, if you want to know more about that issue, here:

As for the maste/slave, You can have two masters, just not both on the sam IDE cable, maintain your HD as master, and put the two optic drives on the other cable, should be ok.
The issue about playing on a regular home dvd player, it will depend on the dvd player characteristics, but if your talking about regular dvd format, just use any mainstream burn program, almost everyone has a "burn dvd Film" option, its pretty much automatic from there
