OK, First of all, a number of questions, and why they are relevant:

1. Are you using mods, and are they up to date? I was using an older iteration of RFB and didn't keep it up to date and I had a problem where the torps would just steer left after leaving the sub.
2. Are you firing auto or manual? There is obviously a difference in what you need to do between the two.

Now, may i suggest the you fire manually, by pointing your sub directly at the target ship, then set the range to whatever value you feel like, directly through the right side, set speed to 0 and AOB to 90 port (doesn't really matter as the speed is 0). Make sure to click the red arrow that sends the settings to the TDC twice at least each time, and also change the range a couple of times, always clicking twice on the red arrow. Your TDC should show the torp leaving your sub at 0 degrees and hitting the ship at a 90 degree angle. Also make sure the PK is off, then open the tube doors and fire. As soon as you do that, hit F11, and follow the torpedos via the external camera, with generous applications of the backspace key (pausing) to allow you to catch up and analyse the shot.

Let us know if this helps. Also, I would like to point you out to Rockin Robbins, most excellent Dick OKane method for shooting manually. It is a beautfully clever yet simple method that allows you to disregard range, and I have been hitting like Michael Jordan in the last minutes of an NBA finals game since I picked up his videos and learned how to do it.
