I think the latest version of OLC GUI Special has the "realistic contact" mod built in (if I remember correctly)... this is why you can't see your own boat and contacts beyond a certain zoom level anymore.
Also you can use the normal OLC GUI with the OLCE part of the OLC Ubermod. So just enable OLCE2 and OLC GUI Core files.

I have the same problem with "golf ball sun" using SH3 Res fix at 1280x1024 native 19' LCD. It looks unrealistic and I can't fix it.
In OLC Uber thread I've read about this problem, but changing any values in ATI drivers, described there, didn't help.
