Removing the bearing indicator on the binnoculars is disorientating I grant you and agree, and Ive had ages to test this out and I have to flick back and forth between bridge and binnocs using the mousewheel to get a rough idea where I am looking.

I would deny most strenuously that the removal of this makes the game harder... mainly because the only time you are really going to use your binnoculars to scan yourself is when your AI lookouts spot something, you will then look in that direction to see if there is more, really its not that hard... just a little inconvenient.

As I say, if that is too much realism for the player... and for me it is occasionally... just use the Uzo. Simple.
I have a 5.1 sound setup, when scanning the horizon I can hear the diesel noises shift from speaker to speaker. It's not really accurate but I always know what 45 degree section I am looking at. (I have a real diesel sound mod, louder when on the bridge).
And putting the binocs down every once i a while to get your bearings works well too and seems realistic, in movies and such you always see them put the binocs down, staring at the horizon ant then raising the binocs again.
