"Be sure to give the ships time to sink on their own".

Yes, maybe if you can wait, but under stress in the middle of a Convoy attack , with the risk of be discovered and detected in the next seconds, is better to expend a second torpedo to be certain to sink this target. Not time there to look by the periscope and wait maybe 30 minutes, one, two ,or three hours to be certain of the destruction and sinking of this target.
My waiting record for a ship sink ,was four days, I have hit a Greek small merchant in the bow with my last torpedo, weather was very bad to utilise the 88mm and I have started a pursuit to expect a improvement of weather.Nothing to do, weather went worse, the Greek merchant sailed at 3 knts, with a heavy bow and starboard list; was attacked by one FW200 Kondor and finally I loss the contact at the fourth day in the middle of storm and raining. Had sinked latter? I dont know.
For that, and to be certain of the destruction and sinking of a target is better sometimes to expend a second torpedo.
