In Real Life, it depended on the size and make up of the convoy (troopships and tankers got more, 6 coastal rust buckets don't get as many). As the war went on you also had huter killer groups, some just escorts, some with a escort carrier or two.

The HK groups would act independent and would attach and split themselves off from a convoy to hunt down a sub at leasure. They would also renforce a convoy escort screen if there was an expectation of a wolf pack about to attack.

I have noticed if a convoy is close to land, and you knock off an escort, a replacment is sometimes sent. There might have been an escort nearby and decided to come and help as well.
