The VIIC would be more familiar to you as its characteristics are very similar to the VIIB (I'm a VIIB fan like you).
The VIIC vs. the VIIB is a tad slower but dives slightly faster and, if I recall correctly, somewhat greater range.
The type IX boats will feel like a lumbering walrus until you get used to it but you are trading off diving speed and maneuverability in exchange for more firepower and much greater range.
I'm with 1st Flotilla out of Kiel and the VIIC did not become available to me until mid-1940. Perhaps that is why you haven't seen it yet; its too early in the year.
