Is there any tutorial that will go over these basic issues, before I can learn to single handedly take on the Royal Navy, I need to learn how to do the bread and butter stuff!!

stop putting yourself down - you cant know it all in one go, and ask as many questions as you need....
when you set off - keep it to a steady 6-7 knots, use your time compression to get to your grid ( dont think you get renown for arriving in grid in gwx2 ?), whilst there spend a few hours below, at about 20-30 metres hydrophoning. if you are in the north sea go the east coast ports like aberdeen, firth of forth, the humber estuary, north of scapa flow, the thames estuary, stay about 50 - 100 km's off shore - stay out of the shallows !!
fast speed is for getting in and getting out - GETTING AWAY and getting down below faster: IMHO.
