Once you're back in port, if you click on the map in the office it should show you what your next patrol grid will be. I suppose there's a chance it will be the same as the last one, but normally it will be somewhere else.
Otherwise, use SH3 Commander to set it. At first I was very cautious with that program because it wasn't obvious to me exactly how I should use it or what it did in terms of modifying the game (and the methods to use it are quite unusual at first), but after a thorough read of the manual and some experimenting it all became clear, and now I wouldn't be without it
