"this time I follow the same pattern but wait for the first shipt to pass by me and go away a little bit, so when both ships are at mostly the same distance from me, start the attack,"

This is the technique I use for unescorted ships in line. A stacked large and escorted convoy requires a much different approach more like what has been suggested by others. I use the same speed torps staggered and fired at furthest ships first. I always attack the largest ships 1st and work my way down. Tanker are amongh my 1st picks because they (on average) represent more tonnage/ship. Even if I only slow or stop it, I'm willing to wait for another chance to finish off such a valuable target. I only use the fast setting on warships.

If I only have torps and fuel for one shot at the convoy, I'll concentrate high volume fire on one or two of the largest ships. Otherwise, I'll choose 1 or 2 I will designate as MUST SINK but be prepaired to fire on additional ships of opportunity on the 1st pass. If I only wound them, that's OK. Given enough time, they WILL go down and make the opportunistic shots pay off.
