Particle density refers to the intenisty of the special effects such as smoke, fire, etc. It takes a lot of processing power to render it, and the higher the particle density, the slower the frame rate. If you have a fast computer, set it to 100%. If you have a slower computer and like pretty pictures, and don't mind the slower frame rate (only during the smoke and fire) set it where you like the picture and have enough frame rate to keep yourself happy.
Of course, with enough Guiness you can be happy with a zero frame rate.
To understand anti-aliasing, google the term or consult your video card manual. It won't change the "stretched" appearence of your monitor.
