It's not that difficult..
If you're lucky, you might find yourself in attack position when discovering a convoy.
If not you have to 'shadow' the convoy for a certain amount of time until you work out the convoy direction and speed. This can be done by radar, or staying just on the horizon for visual contact - make map markings every hour or so. Keep a look out for ASW planes as these can make your job difficult.
Night time is the best time to get into attack position (up ahead of the convoy). You can get in a little closer using radar or going down every hour or so to get a passive hydrophone fix. Full speed to the possible intercept/attack point, the convoy might change course or zig-zag and foil you attempt.
Attack position is best inside and travelling at 90-Degrees to the convoy. You must travel submerged in 'silent running' at not more than 3 knotts, else Bungo Pete's friends will pay you a visit. Use the hydrophone to get a close ship fix and only pop the scope up for final attack. Use your scope sparingly and only to obtain final fixes.
Set torps, fire and dive immediately, using the convoy ships to cover your escape.
Once reloaded.. repeat the whole sequence until you're mentally exhausted or sunk
