I still use the 105mm to good effect - you just need to know where the bad guys guns are.
If they have them at both ends then don't surface, but if the guns are only on the bow
or stern, close to less than 1000m and eyeball the targets. If you're at the right angle, you can put a fish into her to slow her down, then max speed to directly in front or rear (whichever side doesn't have guns) with bow pointing towards the merch. Surface around 500m away, then maintain same speed forwards or reverse and fire away. Even with GWX 1.03 the target will only move enough to fire a couple of rounds (if any at all) as long as you're close enough, and shots into the bow or stern areas will easily sink her.
