Afraid there is no definite answer to this. Small freighters will usually take 1-2, medium to large will take from 2-3 but these are just approximations. I've seen large tankers take 1 and just totally explode and go down and I've also has a small split frieghter take 4 torps. I'm sure others will give you there advice as well.
