I don't quite completely agree. For me it depends on just how bad 'bad' is. Of course trying to line up manual shots in towering waves (and with the stability disabled) might make all the difference.
Also when it come to how many torpedoes to fire my thoughts are that early in the war one or two torpedoes as required would be right, however later its seems some commanders would stand off from the convoy and fire a full spread and hope the best? Only on rare occations did they fire at destroyers and as the war went on the destroyers would keep the uboat down or destroy it. So avoiding shooting at destroyers may be another challenge?

But good on ya for exploring the challenges. I often have to consider what would be the reality rather than what I could do in the game. So far I cut a third off my tonnage sheet by playing the game from a historic perspective. Ive still got some way to go yet though.
