Howdy ya I just reinstalled this as well. This is what I think is the latest and greatest. I tend to go for realistic gameplay.
Install SH2
2) Install the official v1.01 patch
3) Install PM 1.03
4) Install Vicker's Oil Slick 3.0 and Vicker's Fireball addon
5) Install Fletcher's Enhancement Mod 2.3
6) Rainmod.zip (this one makes the rain not white and looks the best)
7) macstu23_SH2moon
8) SHII_New_Sun
9) SHII_BlueMaps
10) reticlemod
11) SH2awardfix
12) bergen_sh2_menus
13) tdc_gauge1
14) Sound Mod ProjektSchwertfisch (this one really spices it up too)
15) I have not tried Seedlers Sky or Land Mod, have not been able to find them on internet.
16) Then install Aces Random Campaign 2.0
17) I think Fletchers realism mod 2.3 has either Uboatmod 2.2 and DES5v3 mod included in it. Or is the latest work in trying to improve game in this area. Not real sure though.
These mods above seem to improve the game where needed. And so far is all that I am using. Hope this helps you get started.
