The only baseball games I can recommend are Baseball Simulator 1000 and, well, Baseball. Both were on the old NES and are still quite fun. I know it's not what you're looking for, but I couldn't resist.
I have been thinking about a "new" baseball game for the PS2, so I'm also interested in this thread.
