You are correct in the fact that perspective/relativity does come into play Heibges. 350 kt at FL20 is far different than 350 kt at 500'.
We are also talking about Hollywood and what they feel will sell. 100 kt at altitude can seem very slow. Unless of course you are in the furball.
Since I have aviation experience I'd rather see the 100 kt dogfight, but very few have my background, and if you want to make money in the movie business liberties have to be taken.
