There is no 'law' for making a choice...that is your job because you are the KaLeun; there are some things that you should take into consideration:
You can only adjust speed for the air torpedo's....not for electric ones ,slow/medium/fast or 30-40-44 knots for the air torpedo, electric runs at 30 knots only.
The air torpedo has longer range....but it leaves a trail of bubbles than can be spotted...if you want to remain stealthy electrics are the choice! At night when the bubbles can't be spotted it doesn't matter.
Magnetic fuses often misfire(d) at the beginning of the war, especially in rough weather, you might want to stick to impacts only until somewhere in the middle of 1942; magnetics should misfire much less then (this is historic; it really happened in WWII). A nice magnetic explosion under the keel does generate a lot of damage though! You can find the depth setting for the magnetic torpedo by looking in the recognition manual; draft of all ships is displayed there...you set the depth for just a nod, say one half metre, under the mentioned draft and it should explode.
You can fire a spread by choosing a salvo by going to F6, the torpedo data computer....you find a button there with the options t/s, s s is for salvo, t for single shots. Below the knob are to buttons that allow you to choose the tubes that will be fired if you opted for a salvo(tube selection), you can manage the 'spread' in degrees (spread angle)...it pretty much speaks for itself.
The choice for how to attack and with what torpedos is dictated by a lot of factors: distance to target/target speed/presence of escorts/weather/time of day/tonnage of the victim....experience is key!
