my general rule for gunbattles is, if they have more guns than you, don't.
personally I don't dodge all aircraft, the ones with only 1 or 2 bombs and few guns I engage, then (try to) dodge the bombs, at which point I take them down with the flak. I generally start doing this when the flakzwillings become available.
also it pays to shoot down stringbags, because they'll send more after you, gives you the opportunity to shoot down most of a carrier air wing, did this near norway once 21 stringbags before running out of ammo
