A small tip which has led me to many convoys is this. When traveling along a shipping route (shown on your map), dive to about 20m now and then and listen on the hydrophone. However dont rely on the AI to do it do it yourself and you occasionally here the "chug chug chug chug" of a convoy. Sometimes its very faint so crank up the volume a bit.
