You can acces the course plotting through the navigator menu, I think you have to be at full stop and at a certain point for it to work, it's explained in the GWX manual in more detail. The TC actually won't work with automated plotting either. You'll have to raise the TC value for Land Proximity in SH3 Commander.

As for speed setting, below and to the left of the machine telegraph dial is a little button, click on it and you'll have the speed dial where you can accurately adjust the speed in kts.
