When you start a career and inside the office go to the left side of the screen to the bookcase. Move your mouse around the bookcase until you find the options book. Open it and then check all the options you want in the game play option page. This should take care of it. I believe in career start mod it reverts back to the easy settings. I believe this anyway. Once you have done this in the office and set sail, it will save your settings for every patrol thereafter.
