I'm using the GWX 8-hr fatigue mod, and pretty much have to constantly rotate guys around.

Easiest to just crew stations lighter than you need. Always have 2 officers resting, for example, leave torpedo rooms and unused engine empty in transit, sonar doesn't need to be crewed when on the surface, etc. Everyone else in the bunks.
