When i bought SHII i use "unlimited fuel" also....
Later on the game i switch to "limited fuel", because it make more mision points...
Now in SHIII, when i start with new career, i selected realistic at 65%
On the other hands, you have to trust more the instrument, and check the max range when you sail at 1/3 ahead just ask the officer and he will calculate the max range in tonnage diesel for you..
And dont be afraid, when you see a fat ship at 6km, you can put all ahead flank to chase that ship, and shoot/torp him...
As long that ship sails slower than you...
Another gas-saver option is, dive at day, and surface and night to charge the batteries...
And when you in dive mode during the day, and the water is calm, and the sonarguy alarm there is a ship closing in, you can surface the uboot to use the deckgun, after target has been destroyed, dive again, till the redlight will pop-up, than it's time to surface to charge the batteries again...
You will see, it save allot of diesel the way i do it...
specialy with a AII class uboot...
Thats the main reason that i can reach the AM52 and back...
and still have 25% diesel left...
