Welcome mate. Learning the right way to attack a convoy is all part of the fun.
When I attack, as soon as all the torps are away I flank speed under the convoy to 160 meters or so, then silent running (unless damaged) and a sharp turn as the speed is running out. From then on it's down to 1kts and 10 degrees port - ten degrees starboard(otherwise known as the crazy Ivan)
This works most of the time.
