I normally fire a spread of 2 torpedos manually at one target.

Assuming you're in a good firing position, you should already have a good estimate of target speed and Angle on the Bow which you have locked into the Target Data Computer. Set your scope or UZO to the intercept/firing position which generally should not be in excess of 15-degrees from zero bearing. Open outer doors and wait for the target to cross the center point of your scope, firing the first torpedo approximately 1/3 of ship length behind the bow. Then click on the next torpedo and immediately fire at midship or slightly behind. You should have two good hits.
