Early on when the liberty ships would sink like dropping a 8:00 class they were made of cheap steel and (as mentioned) has serious structural problems as a result of the chemical metallugurical result of the conditions they were subjected to. The steel kept cracking in the middle of the ship and all it took was 1 torperdo under the bow and it'd sink.
The solution which came later was simple, they took a huge steel beam and welded it across the bow on both sides to keep the integrity of the ship. Historically at least it stopped them from getting sunk so easily (or just breaking without being attacked at all) once the fix was applied to all the ships. While it'd be interesting to implement that aspect of the history of the Victory ships into the game, I fear it'd be a painfull item to implement (although being a good programmer, admit I've been lazy and haven't looked at any modding tools yet
