I go by the Uboat Commanders Handbook, which lays it out step by step.

If I am on the surface for a nighttime surface attack, I immediately turn at high speed and set a course 75° of the convoys course, so I don't get seperated from the convoy more than I need to.

This of course depends on the postion of the escorts.

For a submerged attack, I stay at PD until I determine if the escorts have seen me or not.

If they haven't I try to slip away at Silent Running at PD, keeping a close eye on the escorts through the periscope.

If I see they have spotted my I immediately dive to 150 meters at Flank Speed.

I again try to stay 75° off the base convoy course, so I don't lose too much ground.

If the escorts are persistant I will go to 90°, and if they are really persistant go to 120° from the base course.

After losing the escorts, I move about 10k from the convoy, surface, and begin the overhaul maneuver again.
