Yes. SH3Cmdr allows you to start new careers using existing crew configs. The help file outlines the instructions. To avoid thinking, I would recommend taking your last Crew_Career_x0.cfg file from the "old" career and make three copies titled crew_config_<boat type>_1.cfg, crew_config_<boat type>_2.cfg and crew_config_<boat type>_3.cfg where <boat type> is the type of u-boat that the *new* career will be using. Add these three new files to \SH3 Commander\Crew\My Crew <or whatever>\data\Cfg and select as the crew to use via the SH3Cmdr interface when starting your new career. Obviously don't select the randomise crewman names and experience checkbox.

But the OP asked "(and set all of them: 0 patrols, no medals etc.)". That has to be done manually. But done once and added as a unique crew to SH3Cmdr, it need never be done again.
