The same experience happened with me on a patrol off St John's NFLD.
I had been playing hide and seek from Corvettes and DE's for several days looking for unescorted targets.
I had passed on two small coastal boats around St Mary's Bay,and then late afternoon on day 2 a big weather front rolled in.
It was so rough that even with my scope fully extended the waves made it difficult to see not much of anything..Then "Bingo".
A large merchant about two miles away.
When I got within 700 meters I saw it was just out there floundering and listing to port going nowhere.
I just sat there for about five minutes watching it,no escort, all alone, and seemingly in lots of trouble. Hauled around 40 degrees to port and sent one torpedo into her right flank and she just heaved up and slipped under in less than a couple of minutes.
That has been the only time I've experienced this situation.
