I usually make it from 1939 to about 1942 before getting the snot kicked out of me. I play a modified "Dead is Dead", in that if I get called away from the game for whatever reason (wife and kid, actual work, etc.) and I end up dying because I didn't pause or whatever, I get a do-over. Wife, kids, and work generally didn't interrupt the typical u-boat commander on patrol! If, on the other hand, I die in glorious battle, because of a stupid mistake I made or a good move by the other side, I accept it and start a new career.
This time, however, I started my career in 1943 in the 11th Flotilla in Bergen, hoping to last long enough to get a Type XXI.
By the way, there probably is a mod for this, but I don't know where it is, but it would be interesting to play a Type XXI from the start of the War. For the most part, the technology was there, it just required someone with vision to put it all together in the 1930's instead of the 1940's. For instance, the British R class boats of late WWI had roughly the same performance of the Type XXI/XXIII with a high underwater speed. Why that wasn't seized upon by either side is a mystery to me.
