Well, if your target makes a speed change that drastic, you're liable to miss anyways... but non-homing torps are easier to stomach the miss. Then again, you can always do something (go to flank for a few seconds (not long enough to draw the torp back at you), or broach the surface) to get his attention, and get him to speed up, and attract the homer again.
One very important note: Don't be that louder noise.
