That's a good strategy (although I don't know in real life if they would bring in the external reserves several times like that. The boat is in such a vulnerable position IRL - can't dive - that probably they would just do it once).
It's funny that this topic comes up, because just last night I came across a fast moving surface group (21kts!) in BE61 in october 39, with one carrier and at least one king george, and I only had torpedoes left in the rear tube in my type VII!

... man was I cursing myself for not using a strategy like yours!
For those interested, I managed a shot at the carrier at about 3500 m, missed, and had to dive deep to evade the destroyers (hence why I am unsure about the number of battleships, but I think I saw two).
