I get target speed by taking the length of the vessel and dividing it by the time it takes it to cross the vertical line in the scope. I then multiply that by 1.95 and it gives me the target's speed in knots. I guesstimate the AOB and try to get as close as possible to the target's anticipated track to minimize errors. It works pretty well, especially since range isn't really a factor, unless the target is beyond the range of the torpedo.
