With regards to simulations with Virginia Class Submarines, I think you may be out of luck for the time being considering how relatively new they are.
I have Sub Command which had the Los Angeles Class and also I believe, the Akula Class Russian Submarines. I remember the sonar used a waterfall display for tonals. I haven't played it literally in years so it's hard to remember how well it worked but I liked it.
