I have now downloaded 2 videos from Stoianm explaining what to do against planes with the NewUIs installed (applies for TWoS), and it's much better to use the automation scripts to evade or to attack together with doing it yourself if you can. The video says not to use the crew on flak or deck gun if their ability is not well upgraded.

Also what you say above is pretty realistic because in bad weather I imagine it would be impossible in RL to use the gun, or even have men outside with cables attached, the aerea would not be stable at all... So I will have to get used to not always use flack guns (and instead crash-dive quickly), TWoS is just hyper-realistic also for that, and of course with game limitations still taking effect
