I also noticed at times everything would freeze for up to 60 seconds or so, freeze meaning I could not click on anything. The buttons would not function but I could use keyboard command. By the way do not under any circumstances sink a hospital ship. Yes even Japanese ones ... they court martialed me for it. I had some luck and come across two unescorted slow moving convoys. Two Large Tankers, Passenger liner troop carriers and a few others but I sank the Hospital ship that was with one convoy.

the single war patrols and missions use the option set on the main menu.
career options are set from the menu you see when you are at your home base.
