Default Sinking neutral ships in ww2?

So i just discovered after reading tons of wikipedia articles about uboats, the battle of the atlantic etc due to my love of them and i realised that u boats during the war apparently regularly sank neutral ships out there!

I wonder what made them do it or what was hitler or Bdu thinking?

Examples include spanish, dutch, danish and norwegian ships in early 1940, before conflict had occurred between germany and them. Can anyone shed some light on this?

And by the way what happens if you sink a neutral ship or axis ship in OHII?

I see some neutral ships which are obviously sailing towards enemy british ports but so far i have refrained from attacking them. Even saw a liner of 35000 tons but too bad it was american
