The number of officers will depend on the type of boat you have.
VIIB has 5 officers.
The filing cabinet in the office will show you the officers positions.
IIA Boats carry fewer crew but the principal of dismissing and enlisting is done in the same way.
This can also be done in SH3Commander if you are running this application.
As long as your patrol has ended and you are docked then there should be no reason why any of your crew cannot be changed.
