So much depends on mods, options, and house rules. If you use easier options, and such, the game is indeed very easy.
When I first started playing SHCE, I thought sinking DD's was rather easy. I would often bait them into charging me, before making a down the throat shot. The super-duper auto-targeting TDC always knew the range to the yard, and I quickly learned to hold fire until they were ~600 yds. away. At that distance, they couldn't really dodge the torp, and a hit was almost certain. I would have to duck one barrage of ashcans, as one hit at the bow wouldn't always be fatal, but then they were easy marks for a finishing shot afterwards.
In fact, the enemy destroyers seemed so easy, that I soon began to suspect that the game was not quite realistic (at least with the mode of play I was using). Reading some books on the subject confirmed that this was indeed very much the case.
Later, when I started to play a career (dead is dead), and using manual targeting, I wouldn't even consider such attacks. The risk was very high, and the gain very low. Without the super-duper auto-TDC, I would have to use a spread of torpedoes, instead of 1 or 2, and even then missing would be much more likely. And really, why flush a good career just to prove you can do it?
