In regards to the hydrophones, except during an underwater torpedo attack, use only:
1. At dawn and dusk, when you don't want to be surprised in the rapidly worsening visibility conditions.
2. In poor visbility. (I say always try to stay submerged in heavy fog, especially at night. 90% of my deaths in subsims since 1987 have been from getting rammed in heavy fog).
3. When you are at your convoy intercept point, but the convoy has not been sighted.
I would also suggest using the new NYGM ship damage mod, or again from the Uboat Commanders Handbook, fire 2,3, or 4 torps at worthwhile targets.
If you do just these two things, you can play Aces of the Deep, Silent Hunter 2, and Silent Hunter 3 and have careers that looked like those you might read about on Uboat.net.
But I will warn you, 33% of patrols you may not see anything, and probability being what it is, sometimes you will go 2 or 3 patrols without seeing anything. Well, except for the aircraft trying bomb you that is. If this doesn't sound fun to you, then just don't do it.
I found that patrolling on the surface, and fan shooting at all targets increased the realism level, for me, even more than manual targeting.
