You can also open all the doors using the switches in the first attack periscope view - from the conning tower click the 'scope and you find yourself sitting in the seat looking at but not through the 'scope.

Using the above method (opening all the tubes) I've found I can fire pretty quickly using the mouse. On the other hand in real life they fired a minimum of eight seconds apart to avoid interference between torpedoes.
