I havent got any graphic mods in particular, but if you download any of the larger mods like the NYGM tonnage war mod, or the Greywolves mod, they are packed with grahics updates.
The first thing you should get is jonesoft mod enabler, it makes it very easy to add and remove mods.
then SH3 commander, it lets you change alot of things to make things as easy or as difficult as you like.
im running the NYGM tonnage war mod, and its brought the game back to life for me. It is probably more than your looking for for your first time out, so just try one of the real uboat mods, theyre a huge improvement on the stock game.

I will echo Con20or. I an just getting back into SHIII after a 6 month hiatus and like you I suck at this game untill I regain all those skills I worked so hard to attain. For me realism AND eye-candy are important so I found this thread:

and copied the list of mods that Sailor Steve has installed. I then went out and searched the various threads and mods and read the read-me files etc. paying particular attention to conflicts etc.
I found and D/L'd most of the mods I wanted and then started messing around with installs.
Con20or is right on, you must get JSGME. It makes it so easy to install lots of mods.
For you I would start with RUB1.45 or GW and read all you can, which it seems you have done already, and start trying them out.
I like RUB and SH3 Commander and I'm going to try NYGM-TW as soon as I get back to Keil from my current patrol. One little mod I really enjoy is KptnLt Eric Karle's Interior Life Mod, check it out.
