I think they this because the human element of WWII techonolgy creates an element of excitment that would not be as easy to portray other wise. It creates tension.
For example in Star Wars in final battle Darth Vader is about to destroy Lukes X-wing you are the edge of your seat wondering how Luke will survive. With more computerized action the tension would be lost you not have the good vs evil feel if it was just pushing a button. Of course I see Star Wars (4,5,6) as closer to WWI air combat.
The first film for example would have dull without that element. Also creative license and alternate time means that you create your own future or past in which techonolgy advanced in diffrent way than it has in our world assuming the story even takes place in our exact universe.
