If you get close enough to her she will stop and if you are to close to her bow she will back away from you. Wooden ships are not hidden from radar. I was on a wooden hulled minesweeper in the Navy. While wood may not reflect as well as metal it's mass it still visible on radar.
By the way if you wish to take some photos of the Dutchman just to play around with them you can create a mission and simply add her near you at any place and any time on the map.
