Do not confuse Dual CPU processors with SLI/Crossfire. Games have to be written to take advantage of the dual processor, but not SLI/Crossfire. An example is when AA first came out years ago, the games did not have to be "written" to use AA because it is just the way the graphics are rendered and SLI/Crossfire is the same way.
If you read some of the video card tests, you will see that the FPS increase with nVida's SLI or ATI's Crossfire. All the video card does is split the rendering load between two GPU's versus one GPU. In fact there are several different ways of doing this and each company has it's own methods with the appropriate pro's and con's of each method.
