Ubi patched out the always-on internet requirement over a year ago. Once the game is installed and authenticated once, you can always go into the Uplay options and set it to "offline" mode. The game will still say that it is synchronizing save games, but this is moot in offline mode. You should have no problems.

I have the Disk version, and the autoupdater already updated the game.
So............
I enter the game......it gives me the option to log in off-line mode...
Game starts up....tells me about a synic save game with server failuer...
I start a game anyway....it tells me a synic with server failuer and aborts ANYWAY
....
I have Elder Scroll V: SkyRim. Even though I hate STEAM, I can play that game on-line, or log in off-line mode, and play it ANYWAY
...
