Why did you find it boring? I found it interesting to try different strategies, and see which ones lead to success or failure.
It is kind of silly if you consider it as one pilot changing history by taking on wave after wave by himself like an old arcade game, but it was more along the lines of each unit on your side was counted as being about as successful as you in each mission, not one pilot stopped the entire Luftwaffe by himself, or one pilot downed the entire RAF in one day. I do see a single sub affecting the course of WWII as a bit far-fetched, but possibly some battles might have unfolded differently or happened on a different schedule.
Did you ever play the old Microprose
Red Storm Rising? I'm curious what your thoughts would be on that fictional campaign, where your success or failure moves the NATO forces closer to victory. If I recall, it did also have some level of randomness to it.
